I made tilapia the other night, using a recipe I sort of made up. I had used this marinade for salmon before and it was really good. I marinate the fish in balsamic vinegar, toasted sesame oil, garlic, salt and pepper. I think the sesame oil is the trick. It gives the fish a subtle nutty flavor that we really liked. I also sprinkled some old bay on the tilapia when I cooked them in an iron skillet. The salmon, when I made it, was cooked on the grill (make sure you use some extra oil so they don't stick to the grill.)
