Spicy Chicken Cakes with Horseradish Aioli from my Cooking Light cookbook. I don't like horseradish, though, so I just put some Cajun spice in the mayo and also served them with guacamole. Oh, yea, and I used
Match Ground Chicken instead of real chicken. Even my son liked it.
